I see that just pasting a YouTube video or playlist Url I get the video player. How to set the default dimensions?

Please install JCE Pro 2.9.11 Beta - https://www.joomlacontenteditor.net/downloads/editor/pro/development

You can set default attributes (including width an height) for Youtube, Vimeo, Video and Audio in Editor Profiles -> Plugin Parameters -> Media Manager.
