I would like the JCE editor to work like most modern editors (like MS Word, Google and others) to flag spelling errors when they happen as I type. I like that there is a spell checker. But, I'd like it more if I didn't have to actively turn it on every time I go into the editor. Who knows, maybe there is a way to do that already.

You can set the Spellchecker to be On by default in Editor Profiles -> Plugin Parameters -> Spellchecker.
As this uses your browser's internal spellcheck, the editor's right click menu is disabled when Spellcheck is enabled to access the browser's spellcheck suggestions.
The Grammarly browser extension can provide an alternative to your browser's built in spellcheck - https://www.grammarly.com/

Just because you're not paranoid doesn't mean everybody isn't out to get you.
