Is it possible in JCE to delete the "paragraph" formatting in a post and insert a line break instead?
In other words:
Delete all <p> and replace </p> with <br/>
Unfortunately, deleting using the "delete format" icon button doesn't work.

If the Container Element and Enter Key option in the Editor Global Configuration is set to None : Paragraph or None : Linebreak, then selecting all the paragraphs and selecting Paragraph from the Format list will remove the paragraphs.
