I would like to configure the output of the Font Awesome icons so that they are not embedded in span tags but in i-tags. Is that possible?

No this is not currently possible. The FontAwesome plugin uses <span> tags because it is semantically
incorrect to use tags for this purpose. The "i" does not stand for "icon" - https://developer.mozilla.org/en-US/docs/Web/HTML/Element/i
