I'm trying to add YouTube links into the editor and they come up absolutely fine and everything looks good until I save the page and the YouTube videos disappear?!

Can anyone help me with this?

This is most likely caused by the Joomla Text Filter. Please see - https://www.joomlacontenteditor.net/support/faq/editor/iframe-removed-on-saving

In Editor Profiles -> Plugin Parameters - Media Support, is the Allow IFrames option set to Yes?

After inserting the video, if you click the Code tab, or toggle the editor, is the iframe code still visible?

Also, do you have RSFirewall installed?
