Is there a way to disable the button 'save' when creating an article? Many users click on 'save' instead of 'save & quit'. This way the content is locked until I do a checkin.

This is not under the control of JCE as it is part of the Joomla Article Manager, or whatever extension you are creating or editing content in.
I don't think the Joomla Article Manager has an option to disable or hide the Save button.
