Hello,
in Joomla 5 I have the problem that for example in eShop the fields can no longer be edited.
fields can no longer be edited, they are not displayed, but if I change the
Editor to tiny editor, they are there. Also the JCE - File Browser for the upload is unusable,
everything is small and unusable.

Your server is returning a 502 - Bad Gateway response for all assets of the JCE "browser" plugin, eg:

/media/com_jce/editor/tinymce/plugins/browser/plugin.js
This is causing the issue when attempting to edit in EShop or in other extensions, and when opening the File Browser in the JCE Control Panel.

OK, what does that mean, what can I do?

If you use your FTP client or some other file manager on your site's account, can you see the browser plugin files in media/com_jce/editor/tinymce/plugins/browser?

If you can, then you need to contact your host to determine why those files are causing the error.

No, it is something to do with your server. Have you made any changes to the .htaccess file?

No the .htaccess is standard

I've tested a few other files on your site and the "browser" plugin files are the ony one triggering the error. Please check with your host if they can provide more details of the error.
